Paper Plate Gourmet : Easy Butternut Squash

This was a first for me – Butternut Squash sounds so fancy.  Truth be told, I thought I was buying a spaghetti squash… Either way, so easy & delicious…. (Ignore the ham…. that will be posted later in the week)

  • Butternut Squash
  • Brown Sugar
  • Butter
  1. Heat the oven to 400 degrees
  2. Cut the squash in half (this was the toughest part of this meal)
  3. Scoop out the seeds
  4. Put on a baking sheet flesh side up
  5. Put in the oven, bake for a half hour
  6. Wait the half hour…..
  7. Take out of the oven, rub butter all over the top of the squash
  8. Rub brown sugar all over the top of the squash
  9. Put it back into the oven for around 20 minutes or until it is ‘fork tender’

Paper Plate Gourmet : Pierogies & Veggies

So Easy! Total time in the kitchen - 8 minutes.  Best part – only 1 pot to wash.

  • 3 Mrs. T’s Pierogies
  • 1/3 bag of Frozen Mixed Veggies
  • Water
  1. Put the Pierogies & Frozen Veggies into a microwave safe bowl
  2. Add water to cover food
  3. Microwave on high for 7 minutes
  4. Drain water, put in bowl, eat
5 points+ I liked this plain, but you may want to add a little dressing to the dish. 

If you are making for a big group, I would suggest boiling the pierogies on the stove top & microwaving the veggies separately.  Still REALLY easy.

Paper Plate Gourmet : Zucchini Stuffed Chicken

The hardest thing about making this dish was spelling Z-U-C-C-H-I-N-I…. 

  • 1 tsp olive oil
  • 2 tsp minced garlic
  • 1 small zucchini, shredded  
  • 2 TBS Part Skim Mozzarella
  • 1 heaping tsp Romano Cheese
  • 1 Thin Chicken Cutlet (could have easily made more)
  • 1/8 cup Panko Bread Crumbs (there was left over)
  • Spritz of Olive Oil
  1. Heat oven to 450
  2. Heat oil, saute garlic until golden(around 1 minute)
  3. Add zucchini & Romano cheese, stir occasionally  , around 3 minutes
  4. Set aside to cool, then add mozzarella cheese & mix
  5.  Lay cutlet flat, spread with zucchini goodness
  6. Roll that chicken up
  7. Spritz with Oil, roll in bread crumbs until coated, lightly spritz again with oil
  8. Place in baking dish (I  think next time I will put on a cookie pan to really crisp up)
  9. Bake in the oven for about 25-30 minutes
6 points+…  next time I would serve it with a salad.  YUMMY!

I totally wish I made two (I had enough filling)…. It was so fantastic.  I think it is really hard to go wrong with this dish!

I got the recipe from Skinny Taste (her photo will make your mouth water!) but changed a few things based on what I had.

Paper Plate Gourmet : Veggie Pasta

I need to take a better picture, this is DELISH! This photo doesn't do it justice!

Double Yum & So Delicious.   Best Part – Done in less than 10 minutes!

Veggie Pasta (serves two)

  • 2 servings of Pasta.  (I used a Trader Joe Veggie one)
  • 1/2 bag frozen veggies
  • 2 TBS Feta Cheese
  • 4 TBS Fat Free Zesty Italian
  • 2 TBS Red Onion


  1. Boil water, cook pasta
  2. While this is going, throw the veggies into a microwavable bowl, cover with water & microwave per directions on the package
  3. Strain pasta & scoop 1 cup onto each plate
  4. Strain veggies & scoop 1 cup onto each plate
  5. Sprinkle each plate with 1 tbs of Feta & 1 tbs of Red Onion
  6. Mix each with 2 tbs Fat Free Zesty Italian Dressing
  7. Open mouth, insert food. 

My calculations came up with 7 WWP, but I would do your own math to double check.
