Paper Plate Gourmet : Pierogies & Veggies

So Easy! Total time in the kitchen - 8 minutes.  Best part – only 1 pot to wash.

  • 3 Mrs. T’s Pierogies
  • 1/3 bag of Frozen Mixed Veggies
  • Water
  1. Put the Pierogies & Frozen Veggies into a microwave safe bowl
  2. Add water to cover food
  3. Microwave on high for 7 minutes
  4. Drain water, put in bowl, eat
5 points+ I liked this plain, but you may want to add a little dressing to the dish. 

If you are making for a big group, I would suggest boiling the pierogies on the stove top & microwaving the veggies separately.  Still REALLY easy.

Paper Plate Gourmet : Microwaved “Baked” Ziti with Broccoli

Yes, I made this in the microwave.  Yes, it was fantastic.  Yes, the whole meal was ready in under 20 minutes.  Best part, I made this with all leftovers… Awesome!

  • 1/2 a Box of Whole Wheat Ziti
  • 1/2 Jar of Ragu Marinara Sauce
  • 4 ounces of Ricotta Cheese
  • 1/2 bag of MozzarellaCheese
  • 2 TBS of Grated Paramesan Cheese
  • Bag of Frozen Broccoli
  1. Boil Pasta Al-Dente in salted water
  2. Mix Sauce, Ricotta Cheese, Broccoli and most of the Mozzarella Cheese in large bowl
  3. Once pasta is cooked combine with sauce mixture
  4. Put in microwave safe cookware (I used my Pampered Chef Covered Cooker)
  5. Layer top with Mozzarella Cheese
  6. Microwave on high for approx 10 minutes
  7. Let stand for a minute
  8. Marvel at the simplicity
It depends on the size of your portion. The whole thing is worth 36.5 points…. I made mine into 4 big portions – 9 points.

Paper Plate Gourmet : Zucchini Stuffed Chicken

The hardest thing about making this dish was spelling Z-U-C-C-H-I-N-I…. 

  • 1 tsp olive oil
  • 2 tsp minced garlic
  • 1 small zucchini, shredded  
  • 2 TBS Part Skim Mozzarella
  • 1 heaping tsp Romano Cheese
  • 1 Thin Chicken Cutlet (could have easily made more)
  • 1/8 cup Panko Bread Crumbs (there was left over)
  • Spritz of Olive Oil
  1. Heat oven to 450
  2. Heat oil, saute garlic until golden(around 1 minute)
  3. Add zucchini & Romano cheese, stir occasionally  , around 3 minutes
  4. Set aside to cool, then add mozzarella cheese & mix
  5.  Lay cutlet flat, spread with zucchini goodness
  6. Roll that chicken up
  7. Spritz with Oil, roll in bread crumbs until coated, lightly spritz again with oil
  8. Place in baking dish (I  think next time I will put on a cookie pan to really crisp up)
  9. Bake in the oven for about 25-30 minutes
6 points+…  next time I would serve it with a salad.  YUMMY!

I totally wish I made two (I had enough filling)…. It was so fantastic.  I think it is really hard to go wrong with this dish!

I got the recipe from Skinny Taste (her photo will make your mouth water!) but changed a few things based on what I had.

Paper Plate Gourmet : The Fake Cheese Calzone

I have posted about these fake Calzones before – but this was the one I made last night.  I should have thrown in some veggies, but didn’t- BAD DIZEE!

  • Pizza Dough from a Pizza Place
  • 1/4 cup mozzarella & cheddar cheese mixed (3)
  • Garlic Powder
  1. Heat oven to 375
  2. Roll out 2 pieces of dough into a square-ish shape
  3. Place cheese mix middle of one piece of dough
  4. Put second piece of dough on top
  5. Sprinkle with Garlic Powder
  6. Bake in the oven for about 10-12 minutes
I would mark it down at 10… lots of doughy goodness…

Paper Plate Gourmet : Mama Burger

I don’t know how this burger got it’s name -but I love it!

I usually make 2 at a time since I am the only one in the family who likes burgers.
  • Handful-ish of lean ground beef (mine was 38 grams on the scale) (1)
  • 1 TBS seasoned Bread Crumbs (1)
  • 1 TBS BBQ Sauce (or Catchup) (1)
  • Dash of Salt
  • Garlic Powder to taste
  • Onion Flakes to taste
  • Combine all ingredients in a bowl
  • Split meat into 2 even, flat patties (I like thin burgers)
  • Cook each side on skillet until done (3-4 minutes each)
  • Put on a bun or bread thin (3)
  • Top with a pickle & call it a day
5 Points but that can change with your bun & any additional items on the burger (hummmm… what about fried onions???)

Paper Plate Gourmet : Broccoli Ravioli

Ok, not technically served on a paper plate, but fantastic just the same 

  • Bag of Frozen Ravioli (mine were 6 points+ a serving)
  • Bag of Chopped Frozen Broccoli (0)
  • Ragu Marinara (2 points+ a 1/2 cup)
  • 1 TBS Grated Cheese (1)
  • Boil Ravioli per directions in salted water
  • Microwave Broccoli per directions
  • Heat Ragu Marinara sauce in pot on stove
  • Combine 1 serving of Ravioli, 1 cup Broccoli in a bowl
  • Pour on sauce & mix well
  • Top with Grated Cheese
  • Enjoy!

Paper Plate Gourmet : Boy Scout Chicken

This is an really old recipe my dad used to make when he went camping with the Boy Scouts.  See, I can say that because he doesn’t read my blog.  (HA!)

  • 1 lb Chicken Breast (12)
  • 3 Medium Red Potatoes (12)
  • 1 Red Pepper (I did half Red, half Green – that is just how I roll) (0)
  •  1/2 Small Red Onion (0)
  • 1/3 cup BBQ Sauce (1)
  • 2 TBS Butter (6)
  • Chunk the Chicken Breast & Red Potatoes
  • Slice the Peppers & Onion
  • Dump all ingredients into an oven safe cooker & give a little toss to coat
  • Cook in a 350 degree oven for around 35-40 minutes, stirring once halfway thru
Depends on your serving size – 4 servings are 8 points(techincally 7.75 if you realllllly need that extra 1/4 point)

Paper Plate Gourmet : Super Easy Pizza Dough

 I don’t remember where I found this recipe, but I LOVE it!

There are soooo many things you can do with it (like my Ham & Cheese Almost Calzone).  I usually separate it & freeze it so I can make little pizzas, calzones, bread sticks – even fried dough!

And don’t freak out – there are 9 steps, but if I can do it, anyone can.

  • 3 1/2  cups of flour
  • 1 cup warm water
  • 2 Tbs Yeast
  • 2 Tbs Honey
  • 1/4 cup olive oil
  • 1/2 tsp salt
  1. Pour warm water into bowl
  2. Add Honey & Salt, mix until blended
  3. Add Yeast, mix
  4. Let this mixture sit for around 5 minutes, get a drink & check your e-mail
  5. Add 1 cup of flour & the olive oil, mix
  6. Slowly, add the rest of the flour & mix (stir frequently)
  7. It will kind of ball up, knead for a minute, put in a covered bowl & wait…
  8. After 45 minutes, punch it down, let it rise again
  9. Done, finally.    
The total amount of points is, gasp, 59 but that is for the whole ball of dough. 

Depending on how you divide it, the points go way down.

(Be sure to roll it THIN)
