Paper Plate Gourmet : Chips & Guacamole

Holy Guacamole, Batman…. Since I am the only one in the house who likes the green stuff, I never buy it.  It also freaks me out – what do they put in it that keeps it green for weeks?  I saw this on Mexican Made Easy last weekend - Yummy!

  • Tortillas (I used Fajita Size)
  • Oil for Tortillas
  • Ripe Avocado, cut into pieces
  • 1/4 cup chopped Red Onion (+/- to taste)
  • Salt & Pepper (to taste)
  • Garlic Powder
  1. Heat oven to 400
  2. Cut tortillas into eighths
  3. Brush or spray with oil
  4. Lay flat on cookie sheet & bake in 400 degree oven for 6 minutes (depends on size, the bigger they are, the longer they will need)
  5. Throw these bad boys into a bowl & salt to taste.
  6. Mix the avocado, onion, garlic powder, salt & pepper in a food processor or with a fork until well combined.
  7. Open a Corona & enjoy
4 points for the chips & 4 for the guacamole.  There is enough to share
